Have you ever considered opening a restaurant or foodservice establishment? For many ProStart students, this is their dream. Thanks to several foodservice establishment owners and their willingness to share their personal success stories, the ProStart students are aware of the pros and cons of owning your own business. Throughout the semester, students toured local restaurants where restaurant owners/chefs exposed the students to different aspects of everyday running of a restaurant. Spuddy Faucheaux, owner of Spuddys in Vacherie, gave the students a lesson on cost analysis of food items. He provided the students with a visual of what costs are involved in each dollar earned. Winky Nobile, owner of Nobile’s restaurant, stressed to the students the importance of offering regional favorites such as butter beans and shrimp and their signature dessert, Baba. She also demonstrated the use of a POS (point of sales) equipment and explained how it allows restaurants to run more efficiently.
