A Food Star For St. James Parish

Colin Berthelot is interested in food. Sure, he likes to eat as do most of us. What bona fide resident of South Louisiana doesn’t? He likes food preparation, presentation and evolution. For example, he spoke about food in Brazil that was once the meal of peasants, black bean stew made with pig tails or pig ears, has now become their national food. “That excites me,” Colin said with genuine interest as he continued to describe the dish. That interest in food spurred Colin to enroll in ProStart at Lutcher High School when he was a senior. Unlike most students who take ProStart classes in successive years, he took both parts in his final year.
